The Gondonne soils: composed almost entirely of compacted tiny oyster shells and fine gray silt. The most understated and taut of the trio, this is a wine of great finesse, with an airy coolness and mineral length. Guilhem referred to it as the most connoisseur of the three.
“The 2018 Bourgogne-Côtes d’Auxerre Gondonne has a very menthol-scented bouquet that is typical of this cuvée in its youth (emanating from the blue clay soil). The palate is very well balanced, and the menthol notes are less conspicuous here. Veins of marmalade and quince develop toward the finish. Give this 2–3 years in bottle.” 92 Neil Martin
