Description
For the first time, Cyril separated out his oldest 100 year vines of Aligoté, and vinified them as he does his best Chardonnay wines, ageing in barrel for a spell……the results were quite promising when I tasted it out of tank in November, with the kind of depth of dry extract that one would expect from such old vines, with a creamier texture than one often finds in highly acidic Aligoté.
